Dock souffle is prepared by cleaning a dock plant and placing it in a pot with hot water and a little salt. After it reaches boiling point, the plant is taken out of the pot, and cut finely.

Bladder Dock is an annual, 10-30 cm high, branching from the base. Beanches are somewhat succulent, glaucous and fragile. Stalked leaves are triangular-arrow-shaped, entire. Flower racemes are simple or branched.

These perennials are native to prairies and open woods of Canada and the central and eastern U.S. They have daisy-like, yellow blossoms and resinous sap that is harshly scented.

Additional Comments: The Romans used yellow dock for skin complaints, and Gerard said 'it purifieth the blood and makes young wenches look fair and cherry like'.

MEDICINAL: Yellow Dock is a powerful blood purifier and astringent. It is used in treating all diseases of the blood and skin. It is very high in iron, making it useful for treating anemia.

TOXICITY RATING: Low, unless animals are fed the leaves intentionally.
ANIMALS AFFECTED: All animals may be affected, those being fed garden trimmings are particularly at risk (cattle, swine, sheep and goats).

Several species of the dock genus (Rumex) are sorrels (the common name used also for the similarly acrid but unrelated ).

It is a strange fact that the juice of the Nettle proves an antidote for its own sting, and being applied will afford instant relief: the juice of the Dock, which is usually found in close proximity to the Nettle, has the same beneficial action.

The Weeds Act specifies five injurious weeds: common ragwort, spear thistle, creeping or field thistle, broad-leaved dock and curled dock.

Removal of large weeds with tap roots, such as dock or dandelion, can be achieved quite easily by using a sharp spade.

Growing up on the prairies of Oklahoma, one of the first trees I learned was the hedge apple or "bow dock" as we ungrammatically called it.

Less similar is Dock-Leaved Smartweed also know as Curlytop Knotweed, Nodding or Pale Smartweed (P. Lapathifolium) can reach 2m (6') in height and has longer, slender flower spikes that droop and are white, pink or green.

Distribution
