Grey, or gumbo soils, are often foul smelling due to the lack of air in the soil. They are almost completely impossible to work with because of their slickness. Both can be improved with the plentiful addition of organic matter.

Use
Thyme is widely used as a seasoning. Oil of thyme is used in medicines and perfumes. It goes well in gumbos, bouillabaisse, clam chowder, poultry stuffings, and slow-cooking beef dishes.

The oil is used in perfumery, root beer and candy such as licorice. In Cajan cooking any respectable file gumbo will have ground sassafras leaves for the flavoring and mucilaginous properties the ingredient imparts.

The dried and ground leaves are used to make filé powder, a spice used in the making of some types of gumbo. It is also used in the manufacture of the drug ecstasy, and as such, its transport is monitored internationally.
