A Leek is a biennial grown as an annual. This onion relative does not form a bulb, but rather a fat stalk and strap-like leaves. A cool weather crop, they are at their best when day temperatures are below 75 degrees F.

Leeks have an unfair reputation for being complicated to grow.

Leeks - These glorified onions take the whole season to grow. Sow seed in late April or early May. Pull the soil up around the stems in September to blanch them. They will stand a heavy freeze if lightly protected.

Leeks
Leeks look much like a very large, thick green onion. They develop edible 6- to 10-inch long, white stems as much as 2 inches in diameter. The leaves are thick, flat and blue green. Their flavor is milder than either onions or garlic.

Leeks develop excellent flowerheads if they are allowed a second year of growth. The heads are like the rest of the alliums: large, tight balls, full of little, lilac flowers, held on long, rounded stalks.

Leeks are typically chopped into slices 1/4 to 1/2 inch thick. The slices have a tendency to fall apart, due to the layered structure of the leek. The most common ways of preparing the vegetable are boiled, fried, raw and used in soups.

Houseleeks were sacred to the Germanic god Thor, who was identified with Jupiter or Zeus because of their mutual command of lightning; & for this reason houseleeks were planted on the roofs of houses to ward off Thor's lightning.

The word ramps probably came from a prostitution of the word rampion, an old Anglic word for leeks. Ramps are members of the lily family and are in the genus Allium which also is home to Allium cepa, the onion and Allium sativum, garlic.
