Rhubarb (Rheum) - Herbaceous plants of great vigour and picturesque aspect, and their fine leaves are well seen by the margins of shrubberies and in places where luxuriant vegetation is desired. They like deep and rich soil.

 


RHUBARB
Rhubarb is a perennial vegetable whose leaf stalks (technically "petioles") are cut and used in pies, jams, jellies, sauces and juice.

Rhubarb is a member of the sorrel family, and grows in the wild in western and northwestern provinces of China. It is grown commercially in much of Europe and the United States.

Rhubarb is a rhizomatous perennial whose stems ('sticks') grown as vegetable but used mainly as a dessert. It crops over a long period, is completly hardy and grows in any garden soil.

"Gastrique" is a fancy name for a simple but delicious reduction of fruit (rhubarb, in this case) and vinegar. It is terrific with any meat, especially game or roast pork. Wine vinegar is best, but use what you have.

In Rhubarb the root grows straight down into the soil, with but few branches, and these are not spreading. The form of the leaves is such that they conduct water inwards, not outwards as in the Beech and Arum.

Economically the important members of the family are of the rhubarb genus (Rheum) and the buckwheat genus (Fagopyrum), both native to Asia. Most of the rhubarb cultivated for the edible thick, fleshy leafstalks is R.

The tartness is due to oxalic acid, found also in rhubarb & spinach.

Colocasia esculenta 'Rhubarb' was "discovered" by Oregon plantsman Burl Mostul on a trip to Hawaii, where he found a clump growing in a suburban garden and realized its potential. The 4' tall stems that hold the large green leaves are brilliant red.

Rambling dock (Acetosa sagittata) is commonly called "turkey rhubarb" in many parts of Australia, however it should not be confused with another species that is also given this common name (i.e. Rheum palmatum).

The stems can be peeled and cooked like asparagus or rhubarb. Leaves - raw or cooked - are edible too.
