The luscious tangy leaves of arugula, also called salad rocket by the English and roquette in France, are easy to grow, care-free and absolutely essential in today's wonderful salads.

Rocket salad (Eruca sativa) is the roquette of France and Italy and is a coarse, weedy plant with whitish or creamy-yellow flowers that have an orange-blossom odor. Also known as tira and garden rocket, it is cultivated for salads.

Arugula is also called roquette and rocket. The young leaves of this annual green are rough and slender, with a taste all their own: hot, with a hint of bean or nut flavor.
