Sage, Salvia officinalis, is one of the most popular herbs in North America and Europe. Long regarded as a tonic for mind and body, its name comes from the Latin word "slavere", which mean "to be in good health.

Meadow sage vinegar
Meadow sage vinegar is obtained from filling a bottle with sage flowers on top of which natural vinegar is poured until it covers the flowers and fills the bottle. The bottle is then left to sit outside in the sun for 14 days.

Wild sage is a small tropical perennial shrub with a woody stem that can grow up to 10 feet tall. The serrated leaves are aromatic.

Sage is strong odored and bitter tasting. It is commonly used in cooking.
The bushes usually grow up to two feet high, with grey-green leaves. The leaves have a pebbled texture. Flowers have circular clusters of white, pink or violet.

This sage is encountered as S. oresbia cv. 'Red Mountain Sage', or S. schaffneri. It is occasionally misspelled as S. oresbii or S. darceyi.
It is a vigorous grower and should be cut back and fertilized regularly.

Texas Sage is a native to Texas and Mexico and will tolerate limestone, sand, and clay soils as long as they are well drained. This plant is also heat, drought, and salt tolerant, but definitely not humidity tolerant.

Clary sage is a bushy, compact, highly branched annual that grows to 16" tall and 9" wide. Leaves are oblong to ovate, pubescent, medium green, to 2" long.

Bengal Sage is a herb from the mint family. It has elliptic-oblong green leaves with serrated margins. Tiny while flowers arise on a long vertical spike, much like that in Tulsi. The herb is cultivated for medicinal uses.

Golden sage goes beyond the use as a culinary herb. As an ornamental plant its foliage is outstanding in the garden. Here it is planted with Calluna vulgaris 'Robert Chapman' and Thymus citriodorus, lemon thyme.

Autumn sage is best in full sun in a well drained, somewhat sandy site. Like most dryland plants of the American southwest it resents heavy, wet soils in the winter.

Pitcher sage is a wonderful wildflower found growing over a wide area of the Great Plains. Blooming in late summer and early fall, this perennial is admired for its sky blue flowers and remarkable xeric qualities.

Russian sage can be a focal feature in a Xeriscape garden. However it will also tolerate some heavier watering than what is often required in a Xeriscape. The soft, lavender-blue flowers appear in the late summer and remain attractive into the fall.

Lyre-leaf sage is commonly found growing in hammocks of the northern counties south to the central peninsula and Collier County (Wunderlin, 2003). It blooms from spring through fall.

Sage
There are numerous types of sage, although just a few are considered culinary herbs. A classic herb for stuffing, sage is also used in salads as well as meat and poultry dishes.

MEDICINAL: Sage is used to relieve excess mucous buildup. It is beneficial to the mind by easing mental exhaustion and by strengthening the concentrating abilities.
