(tng´k), black-skinned, aromatic, almondlike single seed from the pod of any tall leguminous tree of the genus Dipteryx in the family Leguminosae (pulse family) of tropical South America.

 


Tonka beans make for a surprising, unusual alternative to vanilla in home-made ice cream, custard and soufflé. Typically, a few beans suffice to flavour one kg of these desserts.

Tonka Beans had been used as a vanilla substitute, as a perfume, and in tobacco before being banned in some countries. They are used in some French cuisine (particularly, in desserts and stews) and in perfumes.
