Xeranthemum - X. annuum is a hardy annual, one of the prettiest of everlasting flowers, growing about 2 feet high, with abundant white, purple, and yellow double, single, and semi-double blossoms.

My favorite groups are the different kinds of xeranthemums and helichrysums. The globe amaranths, with clover-like heads (sometimes known as bachelor's buttons), are good old favorites. Rhodanthes and acrocliniums are also good and reliable.
