Bitter
Acrid. Generally a fault, although in some Italian reds bitterness is considered normal and desirable, particularly in the aftertaste, and usually in a subtle, refreshing form.

Description. An acrid, tingling to burning sensation accompanied by the smell of burnt match heads or wet wool. In the mouth, a soapy character.

Derived from French phrase "gout de pierre a fusil", literally a smoky, whiff of gunflint, almost acrid taste.

Having or being a taste that is sharp, acrid, and unpleasant. Bitter is one of the four objective qualities (sourness, sweetness, saltiness and bitterness). A wine showing harmony between the four tastes makes for a successful overall taste balance.
