Aligoté, the 'second' grape type of white Burgundy, which generally produces rather thin and lean wines, which can be refreshing and nervy but little more.

Aligoté: A white wine grape used in various blends in many countries but best known for its fruity, light wines from Burgundy in France.

In the village of Bouzeron, in the northern part of this area, are being produced white wines with Aligoté grape, certainly the best French wines produced with this grape.

The wines must comprise solely this variety and no other, unlike the more generic Bourgogne Aligoté which, perhaps surprisingly, may legally include up to 15% Chardonnay.

It comprises the districts of Chablis (dry white wines), Côte d'Or (red and white), Beaujolais (red), and Mâcon (white and red). The white wines are made from Chardonnay or Aligoté, the reds from Pinot Noir or (in Beaujolais) Gamay.

Winemakers are allowed to add up to 15% of pinot noir, chardonnay, aligoté or melon grapes to the blend with the gamay grape. Serve with chicken and other poultry, cold meats, vegetables, salads and stuffed peppers.
