A sherry that is aged for a time under flor yeast, then given a boost in alcohol to kill the layer of yeast.

Nuts: Fino and Amontillado Sherries and vins jaunes of the Jura area of France are intentionally oxidized wines; this will give them a nutty overtone. Some oak-aged Cõte d'Or Chardonnays (Meursaults) display various nut-like over-tones.

AmontilladoA style of Sherry. The traditional Amontillado is a mature Fino that is fortified to give it a higher alcohol content (between 16% and 18%) and placed in barrels where flor cannot grow.

Flor is important in the making of fino- and amontillado-style sherries. Flor will not grow on wines with more than 16% alcohol.
