Assemblage (ah-sem-BLAHJ) - Champenois artistry, the hopefully harmonious balance of different varietal wines (chardonnay, Pino Meunier, Pinot Noir), from different villages and vintages.

Assemblage. It is the blending of several wines from different grape-varieties, independently vinified.

Before the advent of inexpensive stainless steel tanks, it was not customary to blend all the wine together and bottle it at once, a process called assemblage.

Of course the grapes that are used, but even more important is the assemblage. This is the blending process by which the vintner creates a particular Champagne.

They evaluated 23 Chardonnays from California, New York, and France in a blind tasting before an assemblage of 250 members of the New York Food and Wine Society. California Chardonnays received the top four scores.
