Backward

Backward
Wines described as backward are undeveloped and not ready to drink. They are often young and tannic, and may also be described as austere. The opposite of forward.

Backward: Used to describe a young wine that is less developed than others of its type and class from the same vintage.
Balance: A wine has balance when its elements are harmonious and no single element dominates.

backward: An adjective used to describe (1) a young largely unevolved, closed, and undrinkable wine, (2) a wine that is not ready to drink, or (3) a wine that simply refuses to release its charms and personality.

backward:A wine that is developing in bottle at a slower than expected rate, and as a result are usually predicted to age slowly. Considered a positive feature of a wine. Strange really as few people actually cellar wines today.

BACKWARD
Describes a wine that retains youthful characteristics despite considerable aging. This usually indicates that it will take longer to reach maturity and requires even more aging in the bottle or barrel. Opposite of forward.

Sip: Take a sip and 'inhale' the wine-like a backwards whistle. Move the wine around your mouth. There are only four things that we actually taste: sweetness, saltiness, bitterness, and acidity.

Some geeks might say the wine was backward, or in a "dumb" stage. I say it smells funky, because it doesn't really show any specific nor ripe fruit; the aroma seems to be a musty mixture of earth, herb, and unripe, maybe dried fruit.

After a cool summer (without any real heat in July or August), the grapes were still green and backward when picking began around 20th September. Both yields and sugar levels were low.

Opposite of "closed-in" or, as used by some, backward. Means presence of "fruitiness" is immediately apparent. Usually employed as a term denoting that the wine is in peak condition and on its plateau of maturity.

To be confusing pH is essentially backwards when talking about acidity (the higher the number, the more alkaline, the opposite of acidity, a solution is). pH is literally a measurement of the number hydrogen ions a solution contains.

But I suspect that wine-industry professionals, fully conscious of criticism of the tobacco industry for allegedly targeting youngsters in their marketing, will bend over backward to avoid similar charges.

Curious where the name Oroppas came from? It's not a name from Greek mythology. It didn't come from a dead relative's name. Pull an old Beatle's song trick and spell it backwards. Got it?

Because these wines are produced from a single year's fruit they reflect that specific vintage and can vary from one vintage to another (from delicious brain-numbing liquids to idiosyncratic wines that can be backward).
