Bung: The primary closure for barrels, hammered into place with a wooden hammer. Bungs are normally made of hardwood (but softer than the oak used for barrel staves to avoid damaging the bunghole when opening and closing the barrel).

Fermentation Lock: Also called airlocks, these plastic devices fit over the tops of carboys or into bung holes of barrels to allow any gas produced by wine to escape while keeping out air.

These devices, available from supermarkets and kitchen supply shops for about £6 (US$9), use a pump with a special rubber bung to create a partial vacuum in the bottle. This reduces the amount of air in contact with the wine.

However, in the manufacture of sherries, the slightly porous oak barrels are deliberately filled only about five-sixths full with the young wine, leaving "the space of two fists" empty to allow the flor yeast to take form and the bung is not ...

In addition, the wine barrel naturally allows in air through the gaps in the staves, and through the bung-hole when the winemaker opens up the barrel to top it up with wine after some is lost through evaporation.

The cask is filled only four fifths of its volume and the bung is not completely sealed. In this way the oxygen will enter the cask while allowing the evolution of wine.
