Wine CandylikeCanina

Cane: The previous season's shoots that have matured and become woody. Selected canes are retained in some styles of pruning for the following season's fruit production.
Canopy: The leaves and shoots of grapevines.

Cane pruning
A method of pruning vines. More details may be found in my advice page on vine pruning techniques.

CANE
The mature shoot of a vine. If the color is green, it's a shoot; if the color is brown, it's a cane.

In the cane-pruning method, from one to four, one-year-old canes, each with six to fourteen fruit buds, are trained along trellis wires.

A racking cane is a stiff, plastic tube, usually "L"-shaped, that is attached to the racking hose to make racking easier.

Molasses
The dark brown, thick syrup of the sugar cane. Available in light, dark, unsulfured, and blackstrap forms. Also known as dark treacle.
Mole
A spicy, rich Mexican sauce consisting of nuts, seeds, spices, chocolate, and peppers.

Dosage
"liqueur d'expedition," addition of cane sugar and wine mixture to replace wine lost at degorgement and identify sweetness levels.

Chaptalization: is the addition of "foreign" sugars (beet or cane) to a must in order to raise the final alcoholic content of the wine.
Clean: having no off-odors or off-tastes.

Invert sugar: Common sugar (sucrose) that has been broken down into fructose and glucose. It does not contain dextrins. One pound of invert sugar is only two-thirds as sweet as cane sugar, ...

Variety grown in Romania that is best trained to bi-lateral cordons with 2 buds per cane. Ripens as small/medium clusters of pale coppery yellow skinned berries. Used to create acidic, easy drinking white wines suitable for blending.

ripens late and is prone to producing high yields which can negatively impact wine quality. During the growth cycle of the grape vine, the first few buds do not produce fruit. The vines need to be trained along a pergola which allows for a long cane ...

As an alternate buy a gallon jug of apple juice (no preservatives), pour yourself a glass (for head space) pour in 1 cup of regular cane sugar, and 1 pack of wine or ale yeast, replace the cap just loose enough to allow the CO2 to escape.

Described as having shrubby growth that responds best when pruned to six bud spurs as opposed to normal cane pruning. Very early ripening and recommended for cool sites. Used to make a light white wine.

Protecting the graft union by "hilling-up" with earth, snow or mulch during the winter months assures the likelihood of trunk renewal and vine survival. In locations where minimum temperatures frequently fall below -10 deg. F, trunk and cane ...
