Describes the smell of cedar wood frequently associated with mature Cabernet Sauvignon or Cabernet blends aged in French or American oak.

Cedary
Aromas or flavours that resemble the smell of cedar wood.
Champagne
A region in France and the sparkling wines produced there using the methode champenoise. In the US, this term is semi-generic to mean sparkling wine.

cedary or cigar box
A cedar aroma is associated with the oak barrels used for aging wine. This term is most often applied to red wines, particularly Cabernet Sauvignon.

cedaryA woody aroma that characterizes certain red varietals. cellarA wine storage area, traditionally underground, but now also as a temperature-controlled room.

This can be either positive or negative. The terms toasty, vanilla, dill, cedary and smoky indicate the desirable qualities of oak; charred, burnt, green cedar, lumber and plywood describe its unpleasant side.

When the toasty or vanillin smell or the taste of tannin imparted by new wood during maturation (or fermentation) dominates the character of a wine. Desirable qualities include: toasty, vanilla, smoky, cedary. Negatives include: burnt, green, plywood.

Coonawarras leading lights were the Parker Terra Rossa First Growth, Hardys Thomas Hardy Cabernet Sauvignon and Orlandos very restrained, cedary St Hugo Cabernet Sauvignon.

The resulting blends are often, though not always, at their best when aged in oak, resulting in darkly coloured, generally fairly tannic wines with dark berry fruit that, when allowed to mature slowly, reveal complex cedary fruit flavours.
