Organic, ripe natural cheese aromas, almost always a flaw, typically indicating an unwanted secondary fermentation in the bottle.

 


Cheesy: A positive characteristic of the aroma and flavour of barrel fermented white wines.
Claret: The traditional English term for red Bordeaux wine. Generically it refers to a full bodied dry red wine.

Cheesy An aroma element characteristic of aged Champagne that develops after an extended period of aging.

Have you ever had a wine that tasted of a mixture of farmyards, cheesy feet and animal poop? The chances are, this wine was infected by the yeast-like fungus Brettanomyces (often abbreviated to just 'brett').

Grapes from the city of the same name, in Burgundy, which is part of a large group of "Gamays" variety with often different, some are clones, but most "dry-" red pulp, much used in the past to color wines cheesy, eighties, France, ...

Acidity and tannins are mild, making this a better match for lean meats and fish rather than fatty beef and cheesy plates. Enjoyable on its own as well - fine for a cocktail quaffer.

Consider a bold, Australian Shiraz or an off-dry Rose with a plate full of nachos or buffalo wings. A light sparkling wine will also handle cheesy nachos well, especially if there is a bit of spice to them.
