Campden, available in tablet form, is used to kill all the naturally occurring wild yeasts and undesirable bacteria in must, and thus prepare it for a "clean" fermentation. It contains potassium metabisulfite, which is a fancy term for sulfites.

Most white wines, including inexpensive chardonnays, ferment in stainless steel tanks, which are inert, easy to clean, and facilitate control of the fermentation temperature. These wines ferment at cool temperatures - usually around 55o F.

Applied to fortified wines, mutage is the French term for the process of stopping the fermentation by the addition of spirit.

Nelson, New Zealand
Freshly zippy, brightly aromatic, clean and crisp with red capsicum and gooseberry characters. Lively, moutwatering.

Big, pungent wines, crisply flavourful, intense, clear.

Crisp
A term for wine that feels clean and slightly brittle in the mouth, usually from high acidity.

Earthy: Describes a wine that tastes of soil, most common in red wines. Can be used both positively (pleasant, clean quality adding complexity to aroma and flavor) and negatively (bordering on dirtiness).

Savatiano is a white grape type that is widely planted in Greece. Capable of producing clean dry whites its character is normally hidden in the Resin scented Retsina of which it is the principal ingredient.

Muskat Krymskii: This aromatic white wine is used in Bulgaria, the Ukraine and other eastern European countries. Other names include muskatel, misket or mishket. The wine tends to be wheat colored, and have a clean fruity bouquet.

Flutes are ideal for champagne and other sparkling wines. But overwhelming all other considerations is cleanliness. A dirty glass - which may not look dirty but which carries a taint - will ruin any wine.
