COMMON WINETASTING TERMS
The list below contains many of the terms commonly used by winetasters to describe the aromatics and flavors of wines, as well as other terms that relate to wine growing and winemaking.

 


Common wine aromas are listed below. The aromas come from the grapes themselves, their cellar treatment, and bottle aging (referred to as bouquet).

Wine which does not belong to a designation of origin or other quality indication or specification of origin.
DE ...

A very common wine tasting term. As with many wine tasting terms, it is rather vague. It literally means "compliant or yielding." When applied to a wine it seems to mean a wine that is easy to drink without being too simple.

One of the more common wine definitions, a dry wine has little or no residual sugar left in it after fermentation.
Earthy
More often used to describe European wines, these have aromas and flavors resembling the earth, perhaps even soil or rock.

Sulfur dioxide is a common wine additive, used for its antioxidant and preservative properties. When its use is not managed well it can be overadded, with its perception in wine reminiscent of matchsticks, burnt rubber, or mothballs.

Field Blend: The practice of planting a vineyard with several grape varieties which are harvested together and all contribute to a common wine. Similarly, the mixing of grapes before the crush to constitute a field blend must.

Blending a common winemaking practice in which the juice from different vats and barrels is mixed together to achieve a desired result.

A common winemaking procedure is malolactic fermentation, which transforms the rough malic acid into the smooth lactic acid.

The most common wines purchased for investment are Bordeaux, California cult wines and Port. The importance of the secondary wine market has led the rise of so-called "supercritics", most notably Robert M. Parker, Jr.

Tafelwein - (Table wine) Represents the most common wine category in Austria.

Optimum temperature for growth of common wine yeasts is about 25 C (77 F), and in many viticultural areas of the cooler temperate zone, grapes are crushed at about this temperature.

The most common wine making technique for Grechetto - in case it is used for the production of table wines - makes use of inert containers, however some Umbrian producers tend to favor the cask or barrique.

Ordinaire: From "vin ordinaire," the term means any common wine of everyday quality. Some people think that Ordinaire is a notch higher than "Plonk" on the quality scale. I don't know that it makes any difference.
