Disgorging :
Principal phase in the champagnization which consists of eliminating the deposit in the bottles caused by the "riddling" on the cork, by elimination or freezing.

 


Disgorging
Using the pressure of gas in the wine to remove the collected sediment from bottle-fermented sparkling wine.

Disgorging
The process of removing the sediment from sparkling wine as the final step of the method champenoise. All of the sediment that has been building up in the bottle over the years has ended up in the neck of the bottle.

Disgorging (Degorgement): In processing, disgorging is the act of removing the frozen plug of ice (containing spent yeast) from a bottle of Champagne or Sparkling Wine, after riddling.

There are, in fact, other processes to put the sparkle in wine.

disgorgingThe process by which the sediment collected in the neck of the Champagne bottle during the riddling process is frozen and expelled prior to the final corking.

Always keep your thumb firmly over the end of the cage and cork to keep the cork from shooting away from you.
Never point the cork at anyone when disgorging. If it gets away from you, it can do damage to a person.
