DRAINED POMACE In a crush tank, the solids left over after the juice has been drained off. This pomace is primarily skins with a small amount of stem bits. DRY Dry/Off Dry: Little or no sugar = "dry", slightly sweeter = "off dry".
The drained pomace (crushed mass remaining after extraction of the juice from the grapes), from white or red fermentations, may be used to provide distilling material for production of wine spirits.
