Esters: Esters are compounds of alcohol and organic acids that give flavours and bouquet to a wine.

A scientific term. It relates to components in wine formed by the combination of acids and alcohol. They contribute the fruity, perfume like smell to wine. In wine the most import esther is ethyl acetate.

Specific flavors may be sensed, due to the highly complex mix of organic molecules such as esters and terpenes, that grape juice and wine contains. Tasters will also distinguish between flavors characteristic of a specific grape (e.g.

Machine harvesters pass through the rows of vines literally beating the individual grapes off the vines with rubber paddles, which are then collected and separated from the non-grape material for transport back to the winery.

The grapes are either harvested by hand (this is best), or with mechanical harvesters. Exposure to air should be kept to a minimum at all stages of the process.

Mechanical harvesters offer a more efficient, often cost-effective, process and are well-suited for large vineyards that lay on a flat patch of earth.

The harvest was early due to a hot spell that kicked it off and a long period warm weather followed to keep harvesters busy. The Cabernets responded by offering generous highly concentrated flavours, and high tannin levels.

Generally light in color with hue that usually is more blue-purple than red, wines made from gamay noir can be very fragrant, full of fruit and fresh, floral esters.

The very action of pouring the wine from one container to another aerates it and releases the esters and aldehydes, perhaps trapped in the bottle for years, to intoxicate your nose and palate.

The large molecule esters were enhanced, providing a broader bouquet without the normal 'intensity' of alcohol vapors. The quick aeration provided a more velvety mouthfeel that lingered longer on the tongue to release more subtle flavors.

Ethyl Acetate
Acid and alcohol combine during fermentation to produce esters, one of which is ethyl acetate. It has a sweet, vinegary smell like nail polish remover and it's considered a fault in wine.

Fruit
One of the taste components of wine. The interaction of alcohol and organic acids results in the development of fruit esters. These compounds imitate the flavours and aromas of other fruits.

By pursing ones lips and breathing through that small opening oxygen will pass over the wine and release even more esters.
