Eucalyptus is an aroma and flavor that typically appears in wine made with the following grapes: Cabernet Sauvignon.

 


EUCALYPTUS
A term sometimes used to describe the characteristic in the bouquet of Cabernet Sauvignon grown in warm climates

Very aromatic quality, akin to mint, classic in some Napa Cabernets, yielding endless discussion as to whether the presence of eucalyptus trees alongside Napa's Martha's Vineyard (for example) directly affects the wine.

Two other well known Cabernet Sauvignon flavors are mint and eucalyptus.

The nose has deep, rich aromas of sweet ripe blackberry, mulberry, and plum, with hints of tar, eucalyptus, and earth. Color is still fairly opaque at the center, a dark jelly-like purple, and is bright magenta at the rim.

Anise, chocolate, ripe plum, and eucalyptus dominate the attack, which is formidable. Some like their wines as strong as cough syrup (like me) some don't. This is not for the timid. Texture is thick and chewy.

Sauvignon Blanc: Recent arrival from France. Pale yellow; aromas of eucalyptus, grass, mango, apples.
Sémillon: Long history in Argentina; pale gold to straw; light citrus with aromas of peach, apricot.

Simple, indistinct wine without flaws.
