The last steps in processing a wine just before bottling, and may include bottling. Often, this includes fining, blending and filtration or centrifugation.

 


Finishing: Fining and Filtration
The finishing process involves several critical components.

Before finishing up, a few words on the other Nantais wine regions. First up, Gros Plant du Pays Nantais, commonly abbreviated to the simple Gros Plant.

Buy a glass stopper when you plan on finishing the bottle the night (or day) it is opened.
Glass stoppers with rubber seals - These bottle stoppers are functional art pieces. The rubber seal will keep your wine from turning for a day or two.

The palate has similar characteristics: wide open, forward, upfront ripe black berry fruit is immediate on the palate, and is followed by spicy vanilla notes before finishing with a mixture of fruit, earth, black pepper, and tobacco.

The public is unwilling to accept cloudy wine or wine with crystals or other particles in it, so various methods are used for "cleaning-up" and finishing wine after fermentation, either before, during or after aging.

The range of possibilities here can result in great differences between wines, influencing the fermentation, finishing, and aging processes as well.

Fining
This is a finishing process that is carried before bottling. A coagulant is added to the wine to filter out proteins and other undesirable compounds. See Wine Making Equipment for more details.

Fining
Fining is a finishing clarification process, performed before bottling, where floculant coagulants, such as egg white or bentonite are added to the barrel in order to remove suspended solids.

In particular, Grüner Veltliner, a local Austrian grape, is capable of producing elegant and pleasing wines having a surprising finishing taste of white pepper.

The region is wide and follow the river, starting in the Auvergne and Massif Central and finishing in the Atlantic coast around Nantes city.
The Loire river is wide and deep. The landscape is quiet and undulated.

Finish - The final impression of a wine's flavour.
Filtration - A finishing process, performed before bottling. The wine is filtered in order to remove solid impurities, such as dead yeast cells.

Metallic - An almost bitter, tinny or inky, hard finishing flavour of metals in reds.

Verdicchio yields a pale, straw-colored wine of good acidic balance offering subtle, crisp, clean white fruit flavors and aromas offset by nuances of citrus, almonds and tree blossoms, finishing on a slight bitter note.

The range of possibilities lead to great variety among wine products, which is extended by the fermentation, finishing, and aging processes.

While the more tannins you have, the more full bodied your wine will be, it will take longer to mature. If you have allowed your must to ferment, I suggest leaving your racked wine for six months (or as long as you can stand it) before finishing and ...

(If it has gone bad, usually from something unsanitary, it will taste like vinegar. It makes you want to puke on one sip, so it's pretty obvious.) Waiting a little bit longer and finishing the rest of this will yield a much better tasting product.
