Gassy: A sensory evaluation term describing a wine that contains residual carbon dioxide left over from the fermentation.

 


Gassy: A wine with carbonation, usually produced by a secondary fermentation in the bottle, but also unexpectedly and unintentionally produced by malo-lactic (bacterial) or alcohol (yeast) fermentation.

carbon dioxide is the harmless gas given off during fermentation and that responsible for the bubbles in all fizzy drinks, including sparkling and slightly gassy wine.
