A wine tasting term. It means just what it sounds like, a slight taste of soil. The French use a term "gout de terroir" that is often used to mean the same thing; although it can also mean that the wine has typical tastes for the region.
Well-drained soils have a higher average temperature, which assists ripening. Pinot noir seems to reflect more pronounced Gout de Terroir, or flavor of the soil, than other black grape types, making vineyard site selection a critical factor.
