Hay: Similar to "grass," only more so.
Hazelnut: A specific nutty quality, usually subtle, not commonplace but pleasant when it occurs. I've found it in Italian Tocai Friulano, French White Burgundies and some dry Spanish whites.

Heady
Strong, aromatic wine with a high concentration of alcohol and other components.

Various aromas and tastes in wine reminiscent of fallen leaves, humus, truffles, mushrooms or hay.
Balance. The relationship among the three basic elements of acidity, tannin and alcohol.

Careful pruning and vineyard attention though can produce spectacular, long-lived wines with zesty acidity and notes of honeysuckle, melon, quince, cantaloupe, flint, straw and hay.

Used to describe aromas reminiscent of fresh grass, crushed leaves, drying hay, heather etc. This word is usually used when the exact aroma such as mint or fennel can't be pinpointed.

Herbaceous Grassy hay-like, thatch.

The trademark "grassy" scent of Sauvignon Blanc takes the lead in a complex aroma that blends tall grass, fresh hay and a whiff of mint as a high note.

Grassy Having the scent of grass, including freshly mown grass and hay. A pleasant signature descriptor for Sauvignon Blanc unless overbearing and pungent.

Merlot
Less tannic with lower acidity than Cabernet Sauvignon, this grape makes reds that are often rounded and smooth textured. Aromas can be plums, hay, berries, and chocolate.
