Maderized
A wine tasting term for a wine that has been affected by oxidation. In extreme examples the wine (usually white wine) has begun to turn brown.

Maderized: Describes the brownish color and slightly sweet, somewhat caramelized and often nutty character found in mature dessert-style wines.

Maderized: a term derived from "Madeira' a type of fortified wine from Portugal, produced by a combination of aging and heating. The color of a maderized white wine is yellow-brown to golden-brown, and it smells and tastes oxidized.

Maderized. Flat, stale-smelling. This fault, to be found in white wine, is caused by oxidation. A maderized wine often darkens to a dull brown color. See also Oxidized.

It is also known as maderized wine, from Madeira wine, which is intentionally oxidized. Oxidation can occur throughout the winemaking process, and even after the wine has been bottled.

Emile Peynaud lists it as synonymous with "maderized" (see above); Alexis Lichine notes that it may represent the "nutty" flavor of Sherry, the "cooked" taste of some California sweet wines, and the "pungent" flavor of Madeira, Marsala and Malaga, ...

Maderized table wines, both white and red, are recognized by their brown color, lack of fruitiness and oxidized taste.

In Australia, where it is known as Tokay, the grape is used to make an increasingly popular unblended sweet wine. Those made in the Rutherglen region generally receive considerable aging in hot cellars, leading to a maderized and oxidative character.

Oxidized: Describes wine that has been exposed too long to air and taken on a brownish color, losing its freshness and perhaps beginning to smell and taste like Sherry or old apples. Oxidized wines are also called maderized or sherrified.
