Melon is an aroma and flavor that typically appears in wine made with the following grapes: Chardonnay, Pinot Gris, and Sémillon.

 


Slice the melons in half then use a melon baller to extract the fruit. Arrange the fruit on a platter as an appetizer or even an after-dinner refreshment. You can also add a mellow cheese to the platter.

8 cups watermelon juice.(1 large watermelon)
8 cups water.
3 1/2 cups granulated sugar.
2 1/2 teaspoons acid blend
1 teaspoon yeast nutrients.
2 Campden tablets.
1/8 teaspoon tannin.
1 package dry wine yeast.

1. Cut the watermelon into roughly 1-inch cubes (precision is not important) and remove the seeds. If you're using other fruits, prepare them accordingly, removing seeds or skins and cutting into small pieces if necessary.

In Oregon it goes by the Pinot Gris tag, and they are solid white wines with seductive appeal of spiciness, aromatics, and melon or pear fruit flavors.
