MID-PALATE
When you take a sip of good wine there is often a sequence of flavor and texture impressions, of which the mid-palate is the impression registered as you hold the wine in your mouth for a moment but before you swallow.

 


Middle, mid-palate: Another technical term (see also "attack" and "finish" or "aftertaste") for the sequence of sensations as the wine hits your palate.

The Evolution Phase is next, also called the mid-palate or middle range phase, this is the wine's actual taste on the palate. In this phase you are looking to discern the flavor profile of the wine.

This varietal, while frequently aromatic and with an attractive finish, also tends to lack mid-palate richness and so is often blended with lower tannin, but "fleshy" tasting grapes, particularly Merlot and, especially in Australia, Shiraz.

Hollow Lacking in flavor, especially in the mid-palate. Describes a wine that has some flavor on the beginning of the sip and on the finish, but is missing intensity or distinct flavors in between.

The palate followed through with blackberry and plum fruit, but in the mid-palate there were these funky vegetal bits that weren't exactly complimentary to the wine.

This area is frequently described in tasting notes as being divided into sections, such as mid-palate or latter palate. For instance, a wine could be described as tasting HARSH from mid through latter palate.
