Nutty
A wine tasting term for a wine that exhibits flavors reminiscent of nuts, especially hazelnut. In some cases this can be a sign that the wine is oxidized. Sherry and Tawny Ports are both very nutty, and very oxidized (hence the brown color).

Nutty
Recalling nuts in flavor. The smell and taste of hazelnuts and walnuts are often associated with wines affected by flor. The flavor of almonds may be found in fresh, young white wines.

Nutty, nutlike: Undifferentiated nuts, may be present as a subtle flavor element in any wine or as a predominant characteristic in a Sherry, Madeira or Tawny Port ... or, as above, in a "maderized" wine that's over the hill.

Nutty
Describes the aroma and flavour frequently found in fortified wines such as Madeira and Sherry; the result of exotic fermentations or deliberate oxidation. Can be a negative character in wines not intended to be made in an oxidative style.

Amontillado - A type of Sherry or Montilla, aged and amber colored with a nutty flavor
Barrica - The classic 225 liter oak barrel used to age wine, made from French or American oak.

This adds some complexity to the wine, and also imparts toasty, nutty and vanilla-like flavours to the wine, especially when the barrels are new. Red wines are rarely fermented in barrels, but will often spend a lengthy period of ageing in them.

In this way the wine will increase its oxidation and its color will get darker, while exalting toasted and nutty aromas.

Instinctively, I want to reach for Vin Santo, a sweet Italian wine with a well-rounded nutty flavor that finishes long and leaves you with a refreshing taste of caramel.

In low levels it can impart positive nutty or caramel characters, however at levels above 5 mg/L it creates an intense buttery or butterscotch flavour, where it is perceived as a flaw.

Emile Peynaud lists it as synonymous with "maderized" (see above); Alexis Lichine notes that it may represent the "nutty" flavor of Sherry, the "cooked" taste of some California sweet wines, and the "pungent" flavor of Madeira, Marsala and Malaga, ...

Amontillado - Amontillados can be dry or have a touch of sweetness, with a nutty flavor. Serve amontillados at basement temperature. Dry Sack is a famous, readily available, good quality amontillado-style sherry.

Flavor - apple, pear, citrus, strawberry, cream and vanilla (typically on the finish), yeast and nutty flavors are all common denominators in Sparkling wines and Champagnes.
