Off-aromas
Aromas that are defective for a particular type of wine. Also called "off-nose".
Off-dry
Not quite dry, yet not quite sweet.

Off
A very general word for any wine that is not quite as it should be. Usually used by a taster familiar with the wine, who is pronouncing that this bottle or sample is somehow damaged.

Undesirable odors perceived by the mouth.

Off the Beaten Sangria Path

Off-flavors (also off-aromas or off-nose)
Not quite right; flavors or odors that are not correct for a particular type of wine; opposite of clean; defective.
Open
Revealing full character.

Off dry: A general term used to describe wines that have a slight perception of sweetness.
Off: A wine that's not quite right, referring to either the aroma or flavors.
Old World: A collective term used for European winemaking countries.

Off-taste Unclean, tainted or diseased wine; not necessarily undrinkable.

Off-smell/Off-taste: an offensive aspect of a wine, such as rotten egg (Hydrogen sulfide) odor, or an atypical aspect of wine, such as a Cabernet-Sauvignon wine smelling or tasting more like a Pinot noir wine, i.e. not true to type.

Very slightly sweet.

Dry/Off Dry: Little or no sugar = "dry", slightly sweeter = "off dry".
Fruit: A key quality in wine; the winemaker's goal is to capture the true essence of the varietal.

Dry, Off-Dry or Sweet: A dry wine is one in which there is no sugar remaining after fermentation. An off-dry wine is slightly sweet, but not so sugary that you couldn't happily enjoy it with a savory meal.

Drip dickey - A wine accessory that slips over the neck of a wine bottle and absorbs any drips that may run down the bottle after pouring - preventing stains to table cloths, counter tops or other surfaces.

First off, some wine bottles (and almost all alcohol bottles) list their alcohol content in terms of "proof". Proof is simply the percentage of alcohol times 2. If a wine has 10% alcohol in it, it might be labelled as 20 proof.

Having an off-putting moldy or mildew smell. The result of a wine being made from moldy grapes, stored in improperly cleaned tanks and barrels, or contaminated by a poor cork. Corked wines never improve with breathing.

Marc the solids remaining in the vat during the vinification of red wines after the liquid has been racked off. (See vin de goutte and vin de presse). Marl general term for any soil which combines clay and lime.

Dirty: Covers any and all foul, rank, off-putting smells that can occur in a wine, including those caused by bad barrels or corks. This is usually a sign of poor winemaking.
Earthy: Describes a wine that tastes of soil, most common in red wines.

Every year the wine contained in the solera is being drawn off - an operation called saca - and then bottled.

The result is that the wine is thrown off balance: you taste the heat of the alcohol over the fruit and other components. The alcohol then tends to overemphasize any bitterness in the wine.

The quality classification starts off with the basic table wine, "Tafelwein" and proceeds to a level 5 designation of "Qualitätsweine mit Prädikat" (QmP) - translated to "Quality wine with attributes.

The primary cause of this off odor is a compound called "TCA" (for tri-chlor-anisole, which is produced by mold growth on the corks during aging and processing at the factory).

(The Croatian grape, Plavac Mali is the nearest local relation still in production.) Zinfandel needs to be properly ripe to show off its slightly peppery full and fruity character.

Decanting: This is the process of pouring off any sediment that has been deposited in the bottle over time to create 'clean wine'. It is frequently done with vintage port or older red wines that have spent many years in a bottle.

In very large containers, the volume of carbon dioxide given off is sufficient to prevent entry of air. In small fermenters, fermentation traps are inserted, preventing entry of air but permitting exit of carbon dioxide.

According to The Robards Report - "The market for futures on the Bordeaux vintage of 1999 is off to a tepid start as a result of mixed reactions to the quality of the wines.

The Spanish are the acknowledged experts, using the solera system of topping off older wines with the more recently made sherry. Thus there are no vintage sherries and the quality is consistent year after year.

Lees: Solid residue (mostly dead yeast cells and grape pulp, pips and skins) that remains in a barrel or tank after the wine has been drawn off.
