Raymond Oliver was chef and owner of LeGrand Vefour restaurant in Paris, one of the France's great restaurants. The three star restaurant had been a favorite of the nation's leaders and artists.

Olive, ripe olive, black olive: An odd but not necessarily unpleasant flavor to find in a wine, turns up occasionally in Mediterranean reds and in some of the more flavorful Sauvignon Blancs and White Bordeaux.

Green olives: I have had very few wines that smelled of green olives, but those few have been Cabernets.
Hard: akin to green, but indicative more of a high tannin level.

Green Olive
Specific vegetal aroma, often noted in Cabernet Sauvignon. May, surprisingly, be closely chemically related to the typical 'blackcurrant' or 'cassis' of Cabernet.

As it ages, it takes on notes of seductive spices, anise, violets, leather, olive, tobacco and cigar box. It's often aged in oak from 6-24 months. It can be quite tannic when young (so decant it for an hour or two if you aren't going to age it).

You can even make references to that summer you spent in the Tuscan countryside, picking grapes and making olive oil. But I digress.

Makes superb reds on Waiheke Island, and in a few other locations. Berryish, green olive flavours, good depth and cellar potential are typical.

The dry sherries are especially good aperitifs since they marry very well with nuts and olives. Sherry is bottled when ready to drink - it does not require aging.

The perfume is so strong it could be mistaken for a woman's perfume, or for a soap (I'm getting Palmolive). That's not a bad thing . personally, I like the smell of flowers and so find this wine pleasing to my honker.

ASPRINIO BIANCO: White-wine producing variety found in the Campania region of Italy. Used to produce a light, crisply acidic wine for very early consumption. Has several synonym names including Asprino, Olivese and Ragusana.
