OPTIMA
A recent crossing of Riesling and Sylvaner grapes with the Muller-Thurgau widely grown in the Mosel-Saar-Ruwer region of Germany. Used for blending to produce local whites.

Open up, opening up
Tasting term referring to cellar-aged mature red wines that dont immediately show much flavours but develop a beautiful bouquet after airing.

open: A wine that readily releases its aroma and flavour.
open fermentation: A fermentation conducted in vessels which are open to the air.

Open: Expressive and easy to taste; the opposite of "closed."
Oxidized: Possessing a tired or stale aroma or taste due to excessive exposure to air. An oxidized white wine may have a darker than normal or even brown color.

Flat, stale or sherry-like aroma or flavor as the result of overexposure to air.

This describes a wine that's ready to drink, often because it’s been decanted (a process of opening up the wine by exposing it to oxygen). I also think of many people as open, especially around 5 pm when they’re ready to drink.

OPEN-UP/OPENING-UP
Some bottled cellar-aged red wines possess the peculiarity that, when the cork is first pulled and the wine poured, the full flavors do not immediately make an appearance.

Open With Care
To open a bottle of sparkling wine, never aim it anyone (no matter how tempting)! There are about 3 atmospheres worth of pressure inside so the cork can pop very quickly and travel very fast.

Open-top tanks: Wine tanks without permanent covers, used only for red wine fermentation. This is the traditional design for fermenters, but modern wineries normally use only the closed-top design.

Open nose filled with forward, ripe raspberry fruit, touch of spice, and hint of earth. Smooth texture on the palate, with slightly green / unripe red berry fruit showing upfront.

Although I live along the East Coast, I find a distressing amount of consumer resistance to the idea that good wine can be grown here.

OUVERT (OPEN)
It says itself of an opened out wine, ready to drink.
OXYDATION
Result of the action of oxygen in air on the wine. Excessive, it results in a modification of the color (onion skin for the reds) and of the bouquet.

Breathing: Oxygen entering wine, allowing it to "open-up" and soften.
Brut: french term used to describe dry champagnes (also used for sparkling wines.)
Bung: The plug that seals the opening of a wine barrel.

AERATION: The process of letting a wine "breathe" in the open air, or swirling wine in a glass. It's debatable whether aerating bottled wines (mostly reds) improves their quality.

Brix: A scale used to measure the level of sugar in unfermented grapes. Multiplying brix by .55 will yield a wine's future alcohol level.

Aeration: Letting a wine "breathe" before drinking it in order to soften the tannins, smooth out the wine, and allow the bouquet and flavors to open up.

If a wine stands open for more than 12 hours, it will begin to turn to vinegar as the oxygen continues to work. Whether to let a wine breathe before serving depends on the wine.
