PECORINO: Red-wine variety grown in the Puglia region of Italy. Has several synonym names including Arquitano, Mosciolo and Vissanello. (No other details as yet).

 


White grapes of the Marches include Verdicchio, Malvasia Bianca, Passerina, Biancame, Trebbiano Toscano and Pecorino.

Sagrantino Passito goes well with unleavened sweet pastries, especially cookies, and crostate (tarts) with blackberry or red fruit jams. It is drunk as a meditation wine or, when aged, with sharp pecorino cheeses.

Drink Sangiovese with parmesan, pecorino Toscana, turkey scaloppini, pasta Bolognese, spaghetti with tomato or meat sauce, salami Toscana, olives, capers, anchovies, broiled light-fleshed fish (sole), breaded veal cutlets, ...
