PH: A chemical measurement of acidity or alkalinity; the higher the pH the weaker the acid. Used by some wineries as a measurement of ripeness in relation to acidity.

 


PH
The measure of acid strength; the lower the pH, the higher the acid strength.
Phylloxera
A parasite louse that feeds on the roots of vitis vinifera grape vines, resulting in the vines' death.

PH
A measure of the intensity of the acidity (hydrogen ions) in grape juice and wine. pH is often a better measure of acid balance in a juice than is the total acidity.
