The best are rare and exciting, tight, very deep flavoured, slightly meaty/earthy wines with piercing aromatics.

As a light- to medium-bodied wine, it happily belongs at the beginning of a meal, setting the stage for the fuller-bodied wines to come. Its high acid and fresh, piercing style are a fantastic match for many first courses such as soups, salads, ...

On the whole, however, they tend to be floral, flinty, light and appley, with sometimes quite piercing acidity. One or two domaines, however, turn out wines of very high quality indeed.

Tarrango
Not a dance, but an obscure cross between a Portuguese grape variety with the Sultana grape, that is sometimes used in Australia to make simple, fruity red wines with piercing acidity.
