PUMPING OVER
The act of pumping wine out from a bottom valve of a fermenting tank up onto the top of the fermenting mass in the same tank to keep the floating "cap" of skins wet.

Pumping over wetting the cap with the liquid from the lower part of the vat (red wines only) in order to get the most color and flavor from the crushed fruit.
