Riesling is considered one of the world's great white wine grapes and produces some of the very best white wines. It's a native of Germany, where it's believed to have been cultivated for at least 500-and possibly as long as 2,000-years.

In Australia James Busby listed Rischling in his 1832 collection and it is known that William Macarthur imported some Riesling vines from the Bas-Rhin in 1838.

This grape produces wines with a brilliant sweet/acid balance ranging from bone dry to intensely sweet.
This is a shame, because the better German wines, made from one of the world's great white grape varieties, Riesling, offer wonderfully fresh, intense citrus flavours, often with a touch of sweetness to counter the naturally high acidity.
Word used to indicate the variety of the vine plant (Pinot, Riesling, etc....) The choice of the grape-variety or varieties is chief to the quality of the wine, this is why each region chooses the best suited to the particular soil.
It is often regarded as somewhat similar in style to the (Johannisberg) Riesling - when vinified as slightly sweet yet tart. Occasionally it is made into a "botrytized" late harvest dessert style wine.
A hybrid grape results from a crossing between a Vitis vinifera variety - such as Riesling or Pinot Noir - with an American vine. Hybrid grapes were once widely planted in France, Canada, and elsewhere but have lost popularity over the years.
For example, a Riesling may be rated a 2 on the LCBO, but upon tasting it, one may not be able to detect any sugar at all. This is because the acid level in the Riesling is so high, it makes the sugars remaining in the wine practically imperceptible.
Choose Sauvignon Blanc, Chardonnay and Riesling grapes for white wine. Sauvignon Blanc grapes make a slightly bitter, crisp wine. Chardonnay grapes make a light-flavored, crisp wine. Riesling grapes make a dry, sweet wine that is perfect for desserts.
Apples: some German Rieslings, some Chardonnays, and some Chenin blanc wines smell and/or taste of apples as part of their varietal character. Often, an oxidized wine will smell of apples, generally less acidic or over-ripe apples.
The desirable rot ("Edelfaule" in German) that afflicts grapes -- particularly Riesling -- late in the harvest season, causing the grapes to dry and shrivel, concentrating the sugar in intensely sweet juice that makes memorable dessert wines.
For white wines, taste: Riesling, Sauvignon Blanc and then Chardonnay.
For reds wines, taste: Pinot Noir, Merlot, and then Cabernet Sauvignon. Don't worry, you'll be told exactly what you're tasting.
Kabinet Wine Term
Kabinet is an official wine term in Germany, often seen on bottles of Riesling (probably because the only German wine that many people in the US see is a Riesling wine). This term simply means it is a "table wine".
Botrytis cinerea - A mould that attacks certain grapes, producing honeyed sweet wines like Sauternes and late-harvest Rieslings.
Bouquet - The complex of aromas that develops with age in fine wines; young wines have aroma, not bouquet.

White wines from Alsace such as Riesling, Sylvaner and Pinot Blanc go very well with fish and seafood meals.
Gewurztraminer is better with foie gras, spiced dishes, strong cheeses or as a dessert wine.
