Rubber band: Unpleasant sulfurous flavor. Like "burnt match," it may blow off with time in the glass but indicates the likelihood of excessive sulfuring by the wine maker. Also typical of some French-hybrid reds made in Eastern U.S. wineries.

 


For example, in Yeast Starter (below) it says, "Cover the jar with a paper towel or napkin held in place with a rubber band." Later in the instructions it says, "...add another 1/4 cup of juice from the must and recover.

If you threw the cork away but still want to store leftover wine, secure the opening with a piece of plastic wrap and a tightly wound rubber band.
Some wines are designed to be enjoyed fresh, while others improve with age.

You'll want to put either rubber bands or tape around the bags at the necks to prevent them from falling off while pouring. You might want to remove any foil caps from the wine's necks as well, to conceal any telltale markings.
