(a.k.a. secondary fermentor) Usually a clear glass container is used although plastic is acceptable. The traditional carboy has a shape similar to a "stubby" beer bottle but, of course, it's much larger. In fact it needs to hold 23 litres.

Stir gently, and place back into secondary fermentor. Repeat process every six weeks until fermentation does not restart with the addition of sugar. Rack every three months until one year old. Bottle.
