SHALLOW
A weak, feeble, watery or diluted wine lacking concentration is said to be shallow.

Young vines with shallow root systems are particularly vulnerable to floods, drought and fertility. If the surface soil is not too wet, too dry, or too fertile, the roots will grow deeper and wider in search of nourishment.

Tastevin: A shallow silver (sometimes gold) wine tasting cup originally used in the Burgundy region of France. Now widely used also by sommeliers in select restaurants, where it might make them look more threatening.

A description of a wine whose aromas and flavors are thin and watery.

Depth: Describes the complexity and concentration of flavours in a wine. Generally refers to a quality wine with subtle layers of flavour that go "deep." Opposite of 'Shallow.'
Developed: Refers to the maturity of a wine.

The wine sample is then disgorged into a wineglass or shallow "tastevin" cup held ready for use by the taster. (Cooks will recognize the similarity to the kitchen implement known as a "turkey baster").

Stir shallowly and recover the primary. Wait another 2-4 hours and fermentation should be more vigorous. Add the remainder of the starter and stir deeply. Recover primary.
