Tarry - tarlike
Tasting term used for an odour having the characteristics of pitch or tar. A wine with a tarlike nose is considered as a flaw.
Tart
A tasting term used for a wine with a high level in acidity.

TARRY/TARLIKE
Descriptive term used when comparing odor detected in the "nose" of a wine with similar odor retained in a memory trained by the use of a comparison kit of scent essences.

Tar / Tarry
Some wines have a dark flavor that wine tasters call tar. It is not the overwhelming stench of a tarred road, rather it is a flavor so dark, that only tar seems to fit. Rhone wines can have this, as well as the Barolos of Italy.

Ever drive by a road crew that was laying down fresh tar on a hot summer day? That smell is echoed in certain red wines, such as Barolo, and is considered a positive trait.

Tar, tarry
As with "smoky," above, a somewhat controversial term that not all wine tasters agree on. I suspect it's a blend of "meaty" and "black pepper" flavors in red Rhone wines like Cote-Rotie and Chateauneuf-du-Pape.

Barbera: Barbera is a low-tannin grape known for its tarry flavor. It is very widely planted - in California it's about equal with Merlot grape vines, while in its home in Italy it has more acerage than Sangiovese and Nebbiolo.

Young Sangiovese has fresh fruity flavours of strawberry and a little spiciness, but it readily takes on oaky, even tarry, flavors when aged in barrels. Sangiovese was already well known by the 16th century.

As palate preferences change, so have many Australian winemakers chosen to produce a wine from Shiraz grapes that is now lighter in style and achieves a balance between the tannins, wood and fruit more quickly and have minimalised the tarry ...
