The white grape Malvasia Toscana, better quality than the traditional Trebbiano, is now also permitted in the blend. The Latin name for Sangiovese, Sanguis Jovis (San Gioveto), translates to 'blood of Jove or Jupiter.

The cultivation of the vine in the Marches is mainly done in the hilly areas and the main varieties found in vineyards are Verdicchio, Trebbiano Toscano, Montepulciano and Sangiovese.

It's made from a somewhat traditional Chianti blend - 60% Sangiovese, 20% Malvasia Nera, 10% Cannaiolo, 10% Ciliegiolo 20% Malvasia Toscana - something we're seeing less and less of since the Consorzio began allowing up to 100% Sangiovese in Chianti ...

has many synonyms in many small regions and is known as Bouan or Beau near the Italian frontier, Cadillac in the Gironde, St Emilion in Cognac, Trebbiano in Corsica and as Thalia in Portugal. In Italy Trebbiano may be followed by Fiorentino, Toscano ...

Currently, the minimum amount of sangiovese permitted in Chianti is 90%. Other grapes that may be used now include malvasia toscana, a white grape far superior to the ubiquitous trebbiano.
