triage, French word for sorting, typically grapes for health and quality in the vineyard or as they are brought in to the winery.

 


triage: (French) One of the steps of the methode champenoise process whereby some fermentable sugar and yeast is added to the base wine in bottle to induce the secondary fermentation.

Then, before bottling, a small amount of wine, sugar and yeast is added ('liqueur de triage') to trigger a second fermentation in the bottle, where the carbon dioxide bubbles are trapped.
