Ullage
Ullage comes from the French word ouillage. Ullage refers to the space in the top of a bottle that is empty.

Ullage is the pocket of air between the top of the wine and the cork or barrel. Excessive ullage may indicate that a wine has oxidized, and reduces the wine's desirability and selling price.
