Definition: Varietals refer to the specific variety or type of grape used to make a wine. For example, Merlot and Cabernet Sauvignon are two different types of red wine grape varietals.

The trend towards selling varietal wines continues unabated with many countries now labelling at least some of their wines as 'Merlot', 'Chardonnay', 'Riesling' etc.

Varietals 101
In case you are wondering, a wine 'varietal' is a wine made primarily from one variety of grape like Cabernet Sauvignon, Merlot or Chardonnay.

Varietal wines may be labeled after a V. vinifera grape if the designated variety makes up at least 75 percent of the product. It must then claim an appellation of origin.

Varietal

Varietal wines
Any wine that takes its name from the predominant grape variety. This is common in the New World, but in Europe wines are usually labeled with the place name.

VARIETAL: Refers to the wine made from a specific grape variety (at least, mostly from that variety). In the U.S., wines are generally varietally labeled, such as Cabernet Sauvignon.

Varietal Wines: Wines that are named after the grape from which they are made (e.g. Zinfandel). In California, the varietal grape must comprise 75% of the wine.

In fact, it is none of the 'international grapes' nor any of the fashionable 'named varietals.' It is difficult to find its name on a wine label for reasons that are political. In France there are four official levels of quality.

In Cabernet Sauvignon a small amount of this vegetal quality is said to be part of varietal character. But when the vegetal element takes over, or when it shows up in wines in which it does not belong, those wines are considered flawed.

monocepage: This term describes a wine made totally of one specific varietal.
monopole: Used to denote a vineyard owned exclusively by one proprietor, the word monopole appears on the label of a wine made from such a vineyard.

Canopy management employs techniques such as pruning and leaf thinning that balance shoot growth and fruit development to maximize the varietal character of the grapes.
